QUESO BLANCO

GO AHEAD, PUT IT ON EVERYTHING!

Queso Blanco

Queso Blanco is great as a dip or served over steak street tacos. Feel free to add chopped green onion, cilantro, or roasted corn to the recipe. This is a great base to get you started and allow freedom to make it your own.

  • 1 tbl of butter 
  • 2 - 4 Anaheim chilis, grilled and chopped
  • 1 poblano, grilled and chopped
  • 1/2 tsp chicken bouillon powder
  • 1/4 tsp chipotle powder (optional)
  • 1/4 tsp ancho powder (optional)
  • 1/2 cup evaporated milk
  • 1 10oz package Oaxaca or quesadilla cheese
  • 1/2 lb or 8oz boars head white American cheese

Grill your peppers, remove skin, and chop. 

In a pot on medium heat, melt the butter and add your bouillon and any seasonings. Fry seasoning for a few minutes before adding your chopped peppers. 

Fry peppers for 2 minutes then add the evaporated milk to scrape up any bits on the bottom of the pan. 

Add your cheese and keep stirring until cheese is fully melted. Do not melt your cheese on high heat or your cheese will burn and thicken.
